Okay so as well as my love for pulled pork sandwiches, I love peanut butter. I like it sweet, I like it savoury, I like it crunchy, I like it smooth, I like it all!
If you follow my boards on pinterest then you probably have already noticed this, as I have a board dedicated to all things peanut butter. And judging by the tweets and messages I have received from some of you out there, you guys feel the same.
I thought I would share some of my favourite p.b. picks from the world wide web in case you have had enough of soft white bread sandwiches spread with softened butter and a layer of peanut butter spread so thick it sticks to the top of your mouth. Oh who am I kidding, you could never get sick of that! But here are some other ways you might like to try it.
And if you haven’t had enough peanut butter yet, here is my super easy recipe for Chocolate peanut butter fudge.
Chocolate peanut butter fudge
250g butter, chopped
1 cup crunchy peanut butter
1 teaspoon vanilla extract
3 ½ cups icing sugar, sifted
1/3 cup cocoa powder, sifted
Place the butter and peanut butter in a saucepan over low heat and stir until melted. Remove from the heat and stir through the vanilla, icing sugar and cocoa powder. Pour into a lightly greased 26 x 16 cm tin lined with baking paper. Refrigerate for 1 hour or until set. Cut into small pieces to serve. Makes 30 pieces
oOo Use a good quality cocoa powder as this will balance out the sweetness of the sugar
oOo This fudge will keep in an airtight container in the fridge for at least 1 week
oOo Great as a gift – cut and pop in mini cupcake cases
