I had a lovely girls Christmas lunch at our house on the weekend and everyone bought a dish. One of the highlights was a healthy take on the traditional Christmas pudding that my friend Sarah bought.
It was choc-full of dried fruit and spices but required no baking and was gluten and dairy free (if you omit the white chocolate topping). Even the ‘custard’ was healthy, made with mangoes, coconut milk and orange juice. It was so delicious and we demolished the lot despite having had a huge lunch prior.
