So Halloween is coming up at the end of the month so I made a few spooky treats to celebrate.
The first one is this recipe for zombie eyeballs (or lemon truffles to the non-believers).

450g store-bought madeira cake, torn into chunks
250g softened cream cheese, chopped
zest and juice of 1 lemon
400g white chocolate, chopped
34 green coconut m&ms (you can just use regular if you can’t get coconut)
Process cake chunks in a food processor to form breadcrumbs. Add the cream cheese and lemon zest and juice. Process until well combined. Roll heaped teaspoonfuls of the mixture into balls and place on a baking tray. Refigerate for at least 1 hour or until firm.
Melt the chocolate in the microwave or in a heatproof bowl over a saucepan of simmering water. Line 2 baking trays with baking paper. Use 2 teaspoons to dunk the truffles into the chocolate and place on prepared trays. Press a m&m into the top of each truffle. You need to work a little quickly here or the chocolate will set before you push the ‘eyes’ in. It would be a good idea to do with two people/kids so one is dipping and the other is ‘eyeballing’.
Refrigerate until ready to serve.
If your kids don’t like lemon, you could make them orange – use orange zest and 1 tablespoon of orange juice or vanilla – use a teaspoon of vanilla extract and 1 tablespoon of milk.
