I love giving food gifts for Christmas, such as my roasted tomato kasundi, but a few of my girlfriends aren’t into pickles and chutneys for some reason (crazy I know!). So this pancake mix is a great little gift for those tricky friends with a sweet tooth. It’s also an easy last minute gift idea as all the ingredients are available from your local supermarket. Just top with a cute fabric scrap and tie on a tag. I wrote the recipe instructions on the back of the tag.
Caramel Blueberry Pancake Mix
1 1/4 cups plain flour
1/4 cup malted milk powder
1 tablespoon baking powder
1 tablespoon brown sugar
a pinch of sea salt
1/2 cup dried blueberries
1/2 cup caramel bits (I used Nestle)
Combine all the ingredients in a large jar, leaving enough room for 1 1/4 cups water and 1 egg.
oOo Variations: You could replace the caramel bits with dark, milk or white chocolate chips. Try using dried cranberries or sultanas instead of blueberries. Add your favourite spice such as cinnamon, ginger or mixed spice.

Caramel Blueberry Pancakes
1 jar caramel blueberry pancake mix
1 1/4 cups water
1 large egg
Add the water and egg to the jar and shake well to combine. Heat a large frying pan over medium heat. Spray generously with olive oil spray. Pour 1/2 cup of pancake mix into the pan and cook for 2-3 minutes, until bubbles appear on the surface. Flip and cook for a further 2-3 minutes or until golden and cooked through. Keep warm and repeat with remaining mixture. Serve with maple syrup and berries. Makes 6
Note: You can keep the wet pancake mix for up to 2 days in the fridge.
