Why have I never thought to try drying herbs in the microwave before?! I often get left with a half bunch of herbs which goes manky in the vege drawer, but not anymore! I am a herb drying master now. It’s super quick and easy and the herbs retain their lovely green colour.
To dry the herbs, place in a single layer on a sheet of paper towel. Top with another paper towel. Microwave in 30 second increments until dry and crisp. They won’t look very different but give them a feel and you will notice that they crumble easily and are very dry. Store in a snaplock bag or airtight container.
I found that the big stalks of rosemary took around 1 minute 30 seconds while more delicate leaves like basil took a little less.
You can also use this method to dry other small foodie items like lime zest or lavender.
