Yeasted waffles
Serves: about 8 large waffles
  • 2 cups plain flour
  • 2 tablespoons caster sugar
  • 1½ teaspoons active dry yeast
  • 2 cups milk (or half buttermilk half milk), lukewarm
  • 75g butter, melted
  • 2 teaspoons vanilla extract
  • 2 eggs
  • ½ teaspoon baking soda
  • Whatever toppings you like. I used butter, maple syrup and mixed berries
  1. Combine the flour, sugar and yeast in a medium bowl. Whisk in the milk, butter and vanilla. Cover with plastic wrap and set aside overnight, until slightly risen and bubbly.
  2. In the morning, whisk in the eggs and baking soda. Cook the batter in your waffle iron according to the manufacturer's instructions. Cook until dark golden if you like them crunchy like me.
